Job Description

Pastry Manager - responsible for supervising the pastry service across the resort kitchens, including breakfast, lunch, dinner, afternoon tea, private dining and room service.

Responsibilities
  • Ensure that all dishes leaving the pastry sections are presented correctly and taste excellent.
  • Train and develop personnel within the pastry section and liaise with them regarding training manuals.
  • Order all food items in a cost conscious and timely manner.
  • Standardise recipes for pastry and bakery and ensure photographs of each item are available.
  • Store goods correctly and hygienically in accordance with HACCP specifications.
  • Adhere to cleaning schedules for the pastry section and maintain high hygiene standards as per HACCP requirements.
Qualifications
  • Previous experience in a similar role is essential.
  • Genuine passion for food.
  • Qualification in culinary arts or similar is desired.
  • Extensive knowledge of food handling standards and presentation.
  • Experience in maintaining HACCP certification.
