Job Description
Pastry Manager - responsible for supervising the pastry service across the resort kitchens, including breakfast, lunch, dinner, afternoon tea, private dining and room service.
Responsibilities- Ensure that all dishes leaving the pastry sections are presented correctly and taste excellent.
- Train and develop personnel within the pastry section and liaise with them regarding training manuals.
- Order all food items in a cost conscious and timely manner.
- Standardise recipes for pastry and bakery and ensure photographs of each item are available.
- Store goods correctly and hygienically in accordance with HACCP specifications.
- Adhere to cleaning schedules for the pastry section and maintain high hygiene standards as per HACCP requirements.
- Previous experience in a similar role is essential.
- Genuine passion for food.
- Qualification in culinary arts or similar is desired.
- Extensive knowledge of food handling standards and presentation.
- Experience in maintaining HACCP certification.
