Job Description

The Daffodil is part of Croeso Pubs, a vibrant hospitality group in Cardiff known for great food, lively atmosphere and memorable service. We're looking for an experienced Sous Chef to support our kitchen leadership, deliver high-quality dishes, and help maintain the culinary standards at one of the city's most beloved venues.

Sous Chef - Support Our Kitchen at The Daffodil

As Sous Chef at The Daffodil, you will support the Head Chef in running a busy, high-quality kitchen across day and evening trade. You'll supervise and coach the kitchen team, assist with menu delivery and food preparation, manage stock and assist with cost control, and ensure that every plate leaving the pass meets our quality and presentation standards. This role is ideal for a dependable, organised chef who enjoys hands on kitchen work and leading by example.

Main Responsibilities - Kitchen Support, Service & Standards
  • Assist the Head Chef in planning and delivering consistent, high-quality food during all services.
  • Supervise and mentor kitchen staff, supporting training, development and a positive team culture.
  • Maintain kitchen organization and discipline during busy services, ensuring smooth pass operations.
  • Support inventory management, stock rotation and ordering processes to help control food cost and reduce waste.
  • Ensure compliance with food safety, hygiene and allergen procedures at all times.
  • Contribute to menu execution, including prep lists, portion control and plating consistency.
  • Cover Head Chef duties in their absence, taking responsibility for service delivery and team direction when required.
  • Assist with rota planning and labour control to support efficient kitchen operations.
Key Skills & Experience - What Makes an Excellent Sous Chef?
  • Proven experience as a chef with supervisory responsibilities in a busy kitchen environment.
  • Solid knowledge of food safety, HACCP and allergen management.
  • Strong organisational skills with the ability to prioritise tasks under pressure.
  • Good numerical understanding for stock control, portion costing and minimising waste.
  • Clear, calm communication and the ability to work closely with front of house to ensure smooth service.
  • A creative but practical approach to food, with a focus on consistency and commerciality.
  • Reliable, punctual and able to work evenings, weekends and public holidays as required.
