Sous Chef
Posted 6 hours 13 minutes ago by TOPCHEFS
No split shifts. No banqueting runs. No last-minute all-day covers. Just a tight, skilled brigade cooking food that matters, in a part of Ireland that is genuinely worth living in. A critically acclaimed, award-winning independent restaurant in Munster is seeking an experienced Sous Chef to join a small, high-calibre team. This is a technically disciplined, seasonal kitchen with a strong track record - alumni have gone on to cook in two-Michelin-starred restaurants abroad - and a structure that rewards chefs who take their craft seriously.
The RoleYou will work directly under the Head Chef, deputising on the pass, owning your sections, and growing into genuine creative input over time. The roster is fixed, predictable, and consistently delivered - no surprises, no chaos. The food is elegant, seasonal, and recipe-led - produce-driven and built on systems that have been refined over years. Your job is to master them first, then make them yours. Specials, section ownership, and monthly menu input follow in time.
Key responsibilities:
- Running sections and deputising on the pass
- Mise en place and service execution across a Thursday-Sunday service block
- Brining, sous vide, and seasonal garnish work to established standards
- Contributing to ordering, GP management, and kitchen logistics
- Developing specials and participating in monthly menu planning over time
- Award-winning independent restaurant in Munster
- Seasonal, produce-led cooking - technically precise, elegant, and grounded in the best of Irish ingredients
- 100% Irish meats; premium artisan produce throughout
- Small brigade: direct working relationship with the Head Chef from day one
- A kitchen with a strong track record of developing chefs to the highest levels
- Competitive base salary DOE, plus a kitchen share of tips and service charge - total earnings typically significantly above the base
- A predictable, structured roster - no split shifts, no unexpected covers
- Approximately 4-4.5 weeks of paid annual closure across the year
- Bank holiday Mondays always off
- A genuine lifestyle role in a beautiful part of Ireland
This role suits a chef who values craft over ego - someone who understands that the best kitchens are built on consistency, not chaos. You may be a strong Senior Chef de Partie ready for the next step, or an experienced Sous Chef looking for depth, stability, and a kitchen you can genuinely grow into over the long term.
You will thrive here if you:
- Are genuinely trainable - open to mastering an established kitchen's methods and philosophy
- Take pride in precision: mise en place, brining, section ownership, recipe discipline
- Have a background in quality-led, produce-driven cooking
- Want real responsibility and a direct working relationship with the Head Chef
- Are looking to commit to something worthwhile for the long term
If this sounds like your kind of kitchen, send your CV now to be considered. No cover letter required - just your CV and your availability.
