Job Description
Overview 
Food Type: Modern British menus, nose to tail policy. Start Date: August 2025. Sous chef sought for The Greene Oak, Brucan Pubs, Windsor, SL4. We are seeking a sous chef experienced in fresh food kitchens to deliver our menu and kitchen management in support of the head chef.
Responsibilities- Work in a 8 person brigade serving seasonal British cuisine, focused on fresh quality ingredients.
- Manage kitchen setup, food standards, brigade and kitchen logistics in a professional, structured kitchen.
- Balanced kitchen management, shared responsibility and operational support.
- Ensure the menu offers accessible classics and adventurous dishes for more curious diners.
- Follow an aggressively British seasonal structure with a strong focus on nose to tail cooking.
- Oversee in-house preparation of all menu items, including weekly butchery of whole carcasses sourced directly from rare breed farmers and daily caught fish.
- Requires an experienced chef confident in all aspects of cookery with a passion for delivering exceptional standards and consistency, with patience, passion and professionalism.
- Under the sous chef role: ordering, stock control, mise en place, team development and kitchen leadership.
- Support the head chef to enable smooth running of the kitchen, open communication with colleagues and share food knowledge.
We are aiming to achieve a consistent 2 AA Rosette standard of cuisine.
