€40,000-€44,000 per annum + tips + subsidised accommodation

FBS Recruitment is partnering with one of Ireland's most celebrated luxury properties to find an exceptional Restaurant Manager.

About the Hotel

Our client is a small, family-owned 21-bedroom luxury hotel set in the dramatic landscape of the Burren in the West of Ireland. The fine dining restaurant operates five nights a week alongside a casual menu two nights a week, seating a maximum of 42 covers (typically 30-34 nightly). The bar serves light lunches, Afternoon Tea (Thursday to Sunday) and daily breakfast for residents.

Requirements

The Role

We are seeking a polished, hands-on Restaurant Manager to lead service in an intimate fine dining setting. You will set the standard for impeccable guest experience, lead and develop the front-of-house team, and uphold the standards behind the hotel's Michelin Key and national awards.

Strong wine knowledge and experience gained in a high-end / fine dining environment
Proven restaurant management or senior front-of-house experience at luxury level
Exceptional guest-facing and leadership skills
Commitment to delivering consistently outstanding service
Equal share of credit card tips, paid monthly (€4,500 total pool in 2025)
Subsidised ensuite accommodation including Wi-Fi, electricity and heat
20 days holiday + 10 bank holidays (hotel closed December & January, with all leave taken in this period)
