Job OverviewThe Waldorf Astoria London - Admiralty Arch is an upcoming luxury hotel that will open later this year. It will feature 100 elegant rooms, 17,500 sq ft of private residences, and two signature restaurants: Coreus by Clare Smyth and Café Boulud by Daniel Boulud. Guests will also enjoy a world class spa, state of the art fitness facilities, and grand event spaces, including a ballroom for up to 320 guests. This role offers the opportunity to join the founding kitchen team and shape the guest experience in a prestigious environment.
Responsibilities- Play a key role in menu development, kitchen leadership, and operational execution for Café Boulud.
- Support the Sous Chef, Senior Sous Chef, and Head Chef in guiding the brigade, ensuring culinary consistency, cost control, and an outstanding gastronomic experience.
- Supervise, train, and motivate the kitchen brigade to maintain a disciplined, cohesive, and high performing team.
- Maintain uncompromising consistency in food quality, presentation, and flavour.
- Engage professionally with guests when required, supporting positive dining experiences in the absence of senior kitchen leadership.
- Ensure optimal staffing through effective rota planning aligned with business volumes.
- Uphold brand and culinary standards through continuous training, coaching, and performance assessment.
- Monitor and control food costs to support departmental profitability and revenue objectives.
- Maintain awareness of interdepartmental operations and their impact on kitchen performance.
- Ensure full compliance with food safety, hygiene, and Health & Safety regulations at all times.
- Proven experience as a strong Chef de Partie or prior Junior Sous Chef.
- Creative, thoughtful approach to cuisine and menu execution.
- Confident supervisory and team leading capabilities.
- Positive, professional attitude within a high performance kitchen environment.
- Clear and effective communication skills.
- Guest focused mindset with a commitment to culinary excellence.
- Impeccable grooming and professional presentation.
- Strong planning and organisational skills.
- Authentic willingness to learn, evolve, and refine culinary craft.
- Relevant professional culinary qualifications (advantageous).
- Flexibility to work varied shifts, including weekends, mornings, afternoons, and evenings.
- Prior experience within a luxury or ultra luxury hospitality or service led environment highly desirable.
