Head Chef (Banquets)

Mission: Exhibits creative cooking skills by personally performing tasks while leading the staff in preparing quality and consistent delicacies for the assigned Events. Works to continually improve guest and employee satisfaction while maintaining the operating budget. Leads development and training of team to improve results while maintaining standards. Must ensure sanitation and food standards are achieved. Supports the department by ensuring his assigned areas are within the financial goals by managing recipes ordering, cost and transfers on a proper manner. The Head Chef will report to the Executive Sous Chef.

Job Description:

• Executing gastronomic offers on his assigned outlets.
• Monitoring and planning of orders, storage and preparations of food items.
• Follow up on Hygiene standards.
• Instruct kitchen assistants and dishwashers.
• Manages his assigned outlets on a profitable manner.
• Implements Outlet setups, including menus, check-lists, dish description and recipes.
• Teach and demonstrate cooking techniques and knife skills.
• Lead instruction for events for single and corporate programs.
• Ensure that food taste, presentation and service is high-quality.

Requirements:

• Flexibility to work evenings and weekends;
• Enjoys interaction with guests;
• Additional responsibilities as assigned by the Executive Chef;
• Communicative, proactive, a strong brand ambassador, flexible and imaginative.
• Ability to distinguish, with a degree of accuracy, differences or similarities in intensity or quality of flavors or recognizing particular flavors or odors using tongue or nose;
• Knowledge of basic and advanced cooking techniques;
• Highly interested in quality products and new developments in the food business.

Education/Professional Experience:

• Specialized or University Degree;
• 5-10 years previous experience in the function.

Linguistic Knowledge:

• Excellent communication skills in English and Portuguese (written and spoken).
