Open all day for refreshments and dining, Eastway Brasserie serves a selection of the chef's favourites; with the grill section showcasing Eastway's signature style. The restaurant stuns with an open kitchen, large windows overlooking Liverpool Street and cozy seating.
Duties and responsibilities- Lead the culinary delivery of our all-day dining and drinking brasserie, Eastway.
- Ensure flawless execution, creativity, and operational excellence while maintaining the highest Hyatt brand standards.
- Oversee planning and execution of all food production, ensuring consistency, quality and timely delivery.
- Lead, develop and inspire the kitchen brigade, creating clear structure, accountability and strong service leadership during peak operations.
- Drive food cost control, labour efficiency and waste management in line with budgeted KPIs.
- Maintain exceptional food safety, hygiene and brand standards across all areas.
- Monitor guest feedback and operational performance, implementing improvements that enhance both experience and profitability.
Proven experience as a Head Chef or Senior Sous Chef within premium hotel operations. A structured, hands on leader with strong operational control, who can maintain exceptional culinary standards in a fast paced environment.
