We are currently seeking a strategic, inventive and visionary Executive Chef to lead our culinary team and play an active role as an integral member of the leadership team at Gleneagles Townhouse.

Gleneagles Townhouse offers all-day dining in our vibrant restaurant, The Spence; perfect for breakfasts, long lazy lunches and spirited dinners. Our two bars are striking, including a rooftop terrace where guests will enjoy extraordinary views over the city, previously only held by our rooftop statues!

Perfect for private celebrations, conjuring team plans or glorious get-togethers with friends, we also have an array of private dining spaces to suit almost any occasion.

Our 33 bedrooms have each been uniquely designed to inspire a sense of understated luxury, with an appreciative nod to the heritage of the building.

Lastly, the Townhouse is also home to our members club, bringing together a community that has a passion for exchanging ideas, discovering new obsessions, collaborating together and simply having fun, with access to exclusive private spaces and on-site gym and wellness.

For the past century we've been making memories at our iconic hotel and sporting estate in rural Perthshire. The launch of Gleneagles Townhouse, a luxury hotel and members' club on St Andrew Square, Edinburgh, has created an exciting new chapter in our history.   • Understanding the changing needs and expectations of our workplace and culinary brigade, you'll create balance and build a culture of care where the wellbeing of the brigade is central to your thinking and actions
  • Developing our culinary strategy with our owner, Managing Director and General Manager, encompassing our extraordinary focus on food and strive for excellence
  • Leading in the pioneering creation of exceptional dishes and menu development, you'll showcase the outstanding produce Scotland has to offer, with flavours from around the world, you'll be designing remarkable menus to surprise and delight our guests
  • You'll be creating a calendar of spectacular culinary experiences, including bespoke events for our members, throughout the year
  • Both strategic and precise in your planning and organisation, whilst also being hands on and leading the brigade from the front, we're much more likely to find you on the pass than in an office. You recognise there isn't the time or space for this to be merely a figurehead role
  • You'll get the best from each and every one of our suppliers; building strong, trusting and respectful relationships, you'll ensure we have first pick of their offering at the most competitive price
  • Seamlessly managing our procurement process with our Head of Procurement, always making sure we the highest quality product balancing seasonality, choice, trends and commerciality to deliver our food costs within budget
  • Flexing your financial acumen, focussing on and contributing to profitability, knowing exactly the impact of the quality and pricing of the food you produce Responsible for the creation, management and fulfilment of all kitchen budgets, you'll work closely with your Food and Beverage colleagues to ensure we maximise every potential revenue stream, knowing exactly the impact of the quality and pricing of the food produced
  • You'll be juggling the complexity of three kitchens across two levels, but take that all in your stride through the trust and camaraderie you've built across the brigade
  • Developing your team; from our Kitchen Porters to your number two, you'll provide them with inspiration, nurture and direction Working with our Culinary Development Partner to deliver structured relevant training to all levels across the brigade, including master classes and supplier visits
  • Working together with our Talent Attraction team, an industry leader and advocate for all that we achieve at Gleneagles, to source and attract the strongest chefs to our business
  • You'll work closely and collaborative with every team in the Townhouse, recognising that communication is central to success
  • Accountable for the implementation of all Health and Safety, Food Safety and statutory compliance and training across all kitchens, you'll ensure our systems and procedures are watertight
  • Interacting with our guests, always warm, professional, helpful and doing everything you can to exceed their expectations; playing your part in making their stay with us luxurious in every way
The kind of person we're looking for:
  • As an all-day dining brasserie, members club and with just 33 hotel keys, you're perhaps more likely to come from a background in high-end, lifestyle restaurants than hotels, but have likely experienced both throughout your career
  • You have multi-outlet experience and understand the complexity this can create; you know how to embrace and innovative to overcome this
  • A fantastic cook, with an outstanding track record, never resting on your laurels, you continually strive to keep on learning and honing your skill
  • Strong knowledge and real, practical experience of Pastry is key; you understand this art form, the attention to detail, organisation and patience it requires
  • Highly organised and adept at managing competing, and sometimes conflicting, priorities, you also like it when your work stands out from the crowd, and you make sure you're always one step ahead of industry trends
  • You're up for doing things differently and trying (almost) everything once
  • A great team worker with strong communication skills; you want to be part of a team that works hard, supports each other and above all has fun along the way
  • Collaborating with others comes naturally to you, you know that it's the sum of the parts that will reap the greatest reward; you create an environment where trust, initiative, and taking creative risks are rewarded and your clear leadership keeps the operation running without a hitch
