As a Specialist Indian Chef de Partie, you will play a key role in delivering the authentic taste of Oudh to every guest, ensuring dishes reflect both time honoured craftsmanship and meticulous execution.

Role Overview

The Chef de Partie is responsible for running a designated section of the kitchen with precision, consistency, and culinary integrity. You'll work closely with the senior kitchen team to uphold the restaurant's standards while mentoring junior colleagues and continually developing your own technical skill set.

In Your First 12 Months, You'll
  • Oversee daily preparation and cooking within your section, ensuring quality and consistency
  • Execute authentic Lucknowi / Awadhi recipes with accuracy and care
  • Manage mise en place, service flow, and plating within your responsibility area
  • Maintain high standards of presentation, seasoning, and portion control
  • Uphold full food safety, hygiene, and allergen compliance
  • Monitor and maintain section stock levels, storage, and labelling
  • Minimise waste and contribute to efficient cost control
  • Collaborate with peers and senior chefs to refine dishes and develop new menu elements
  • Demonstrate professionalism, precision, and pride in every service
What You Bring
  • Proven experience as a Chef de Partie in high quality Indian or fine dining kitchens
  • Strong technical knowledge of regional Indian cooking
  • Ability to manage a section independently and efficiently during busy services
  • Excellent knife skills and understanding of classical cooking methods
  • Good communication and teamwork, with a calm, disciplined work ethic
  • Passion for heritage led, quality focused Indian cuisine
  • Flexibility to work evenings and weekends as part of a committed team
