Sous Chef - Independent Premium Café & Brunch Concept, Notting Hill

£40,000 per year (£30,000 basic + £10,000 tronc)

45 hours over a 5-day week, all shifts between 7am and 6pm - no evenings

The Opportunity:

We're looking for a Sous Chef to support the Head Chef and kitchen team at an established, independent daytime café and brunch restaurant in Notting Hill. Working 5 days on and 2 days off, 45 hours, and every working hour falls between 7am and 6pm - no late finishes and no evening service and you would need to be fully flexible to work any 5 days of a 7 day week as the cafe is open Monday to Sunday.

An independent, founder-led group of premium daytime cafés in London - Australian café culture done properly, an all-day brunch menu built on wholesome, ingredient-led cooking, and speciality coffee taken seriously. A strong vegan and vegetarian offer alongside a seasonal menu focused on health and well being. A well-established Notting Hill restaurant with a loyal following and strong weekend trade - tiled walls, huge windows, a small open kitchen and a sheltered courtyard outside.

The kitchen:

You'd be supporting the Head Chef in a brigade of x9 chefs including yourself - x1 Head Chef, x3 full-time Chef de Partie, x2 part-time Chef de Partie, x1 Commis Chef and x1 KP. It's a small open kitchen, so this is a hands-on Sous role: on the section, running the pass, and leading alongside the Head Chef and assuming leadership of the kitchen in the absence of the Head Chef. Prep discipline and consistency matter more here than a long menu.

Hours & Pay:
  • £40,000 per year - made up of £30,000 basic plus £10,000 tronc.
  • Salaried and permanent, the opportunity is available immediately.
  • 45 hours per week, 5 days out of 7 - All working hours fall between 7am and 6pm.
  • Full time and permanent, the role requires full flexibility to work on any weekday and/or weekend.
Your Experience:
  • You'll need solid Sous Chef experience, or strong senior Chef de Partie experience
  • Experience working in a professional, busy fresh-food kitchen.
  • A good communicator who leads alongside their Head Chef, supports the CDPs and commis around them, and keeps a small team working well together.
  • Have developed a career in known high-street brands in London.
  • Demonstrate consistency and a thoughtful career that you have developed from role to role.
  • Hands-on experience in kitchen management, stock control, HnS and general kitchen admin.
