Job Description
Introduction
Poco is a family run business, passionate about authentic Italian food, using natural and locally sourced ingredients from our own kitchen garden and from suppliers, within an 18-mile radius. We bring all these wonderful ingredients together to prepare daily our signature fresh pasta, breads, sources, chutney and deserts.
This is complementary to our front of house, which prides itself on an attentive, warm and personalised experience, accompanied with a bespoke selection of wines, sourced from exclusive vineyards.
With 30 covers and a small seasonal menu, focused on quality and authenticity, we are looking for a Sous Chef that embraces Poco's values, brings passion, a team spirit and ethos to drive, consistency of delivery through effective management, initiative and creativity.
Key Experience & Qualifications
Minimum 3 years within a restaurant environment
Level 2-3 Food Hygiene
experience with authentic Italian cooking preferred
Food Management
Manaing all aspects of food production and presentation according to established standards
Ensure that kitchen equipment, utensils, appliances and working areas, are kept and maintained to the highest standards
Ensure effective food storage and stock rotation, to maintain high standards and adequate supply at all times
Health, Hygiene & Compliance
Ensure that food wastage and over production are kept to a minimum
That surplus food is regularly recorded
Adhere to allergen guidelines
Adhere to industry standards to prevent cross contamination
Ensure daily monitoring / reporting of open and closing
Pre-requisites
Full UK driving licence
Personal transport
