Duties and Responsibilities
As Sous Chef, I will support the Executive Chef and assume responsibility for the efficient operation of the culinary department, including:
- Keeping abreast of industry trends and practices to improve the product and service offerings.
- Focusing on the continual rejuvenation of the culinary experience.
- Assessing menus regularly to ensure relevance and alignment with Six Senses practices.
- Inspecting kitchens regularly and ensuring maintenance and product improvements are addressed promptly.
- Establishing purchasing practices that meet the requirements of Six Senses' nutrition and sustainability standards.
- Leading a team of engaged hosts to deliver exceptional service standards.
- Instilling a cost-focused philosophy through training and education.
- Ensuring departmental operations comply with legal, statutory, and financial requirements, including documentation, reporting, contractual obligations, security, safety protocols, and budget controls.
- Adhering strictly to LQA standards and guest feedback.
Qualifications
To succeed as Sous Chef, I should possess the following qualifications, skills, and experience, preferably in luxury hotel settings:
- A high school diploma or equivalent, with at least 5 years of kitchen experience in a full-service outlet or similar environment. A hospitality diploma or degree from a recognized institution is preferred.
- Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concepts.
- Fluency in English; additional languages are preferred.
All candidates must have the right to work in the UK; sponsorship is not available for this role.
