About Us

Town opened in April 2025 under the direction of executive chef Stevie Parle (Dock Kitchen, Joy at Portobello), with a key focus on British produce and regenerative agriculture. The innovative menu, meticulous sourcing of ingredients, and sleek design won it a great deal of critical acclaim from respected journalists including Grace Dent, Jay Rayner, and Giles Coren. Now entering its second year, Town is expanding into the basement with the opening of two new PDRs and a wine lounge, and are in need of a new Sommelier to help develop and administer an extended wine programme.

The Role

We are looking for a knowledgeable and experienced Sommelier to join our team and elevate our wine offerings. In this role, you will be responsible for curating and managing the wine list, guiding our staff and guests in wine selections, and fostering a culture of wine appreciation throughout the restaurant.

What You'll Do
  • Develop and maintain an innovative wine list, focusing on quality, value, and pairings with our seasonal menu.
  • Provide wine training and education to staff to enhance their wine knowledge and service skills.
  • Assist guests with wine selections, ensuring an great dining experience.
  • Manage wine inventory, including ordering, stock levels, and proper storage practices.
  • Stay current on wine trends and develop relationships with reputable wine suppliers.
Requirements
  • At least 1 year's previous experience as a Sommelier in a high end restaurant environment.
  • Confidence on the floor handling busy services, with an engaged and personable nature with guests and the ability to recommend pairings sensitive to the menu and the guests' needs.
  • A minimum of WSET level 2 or equivalent level of wine knowledge.
  • Excellent communication and interpersonal skills.
  • Organisation and attention to detail in the management of service and stock control. Experience with stock management systems such as Marketman and Hops would be a great plus.
  • Legal right to work in the UK and flexibility to work evenings and weekends.
