Senior Restaurant Manager

An exciting opportunity has arisen for an experienced and passionate Senior Restaurant Manager to join the team at Peploe's, one of Dublin's most established restaurants located in the heart of St Stephen's Green.

Peploe's is renowned for its elegant dining experience, classic European cuisine, and warm hospitality. We are seeking a dynamic leader who thrives in a fast-paced, high-quality hospitality environment, and who is passionate about delivering exceptional guest experiences.

The Role

As Senior Restaurant Manager, you will lead the front-of-house team and play a key role in ensuring the highest standards of service and guest satisfaction. You will lead from the floor, working closely with the kitchen and wider team to deliver a seamless and memorable dining experience.

Responsibilities

• Leading, mentoring, and developing the front-of-house team
• Ensuring consistently high service standards and guest satisfaction
• Managing daily restaurant operations and service flow
• Maintaining exceptional standards of mise en place, presentation, and hospitality
• Handling guest feedback and resolving issues professionally
• Working closely with the kitchen team to ensure a seamless guest experience
• Creating a positive team culture that reflects the values of hospitality and professionalism

About You

The ideal candidate will bring strong leadership, passion for hospitality, and a genuine commitment to service excellence.

Requirements

• Minimum 10 years' experience in hospitality, with significant time in a senior front-of-house leadership role
• Proven ability to lead, motivate, and develop high-performing teams
• Strong organisational and communication skills
• Ability to remain calm and professional in a busy service environment
• An excellent understanding of wine
• International hospitality experience is advantageous but not essential
