This role is to oversee the day-to-day service of the Restaurant and Cafe whilst supporting the team and working with them during shift, keeping the department compliant with all legislation and training and ensuring the highest standards of customer care.
Main duties of the jobThis post covers the service needs of the hospital run retail units providing facilities for Patients, Visitors and staff to use, ensuring we have food and beverages available for them in a clean and safe welcoming environment.
Key responsibilities include:
- Staff training and record keeping
- Communicating with Back of House
- Recording HACCp and ensuring allergen data is correct for all dishes
- Maintaining the restaurant team on top of filling, cleaning and keeping the service running smoothly during opening hours
- Supervision of the back of house team, as required
The role also requires the supervision of the back of house team should the need arise.

Job responsibilities- Supervise the retail team and provide support in day-to-day services and operations ensuring the safe and compliant delivery of services.
- Liaise with the back of house team.
- Ensure compliance of HACCP and FSM systems; staff training and trust procedures.
- Maintain cleaning and equipment standards, dealing with complaints and compliments appropriately.
- Check food items to ensure they meet the required temperatures.
- Organise, supervise and partake in the picking, replenishment and distribution of food items for all retail services.
- Accountable to the Patient and Retail Relations Manager for retail operations and manage aspects of the operation as required.
- Notify the Manager of any discrepancies in deliveries, product suitability, allergen discrepancies, packaging issues, shelf life, equipment failure and other safety standards.
- Manage stock rotation and ordering following FIFO rule, ensuring storage standards are maintained.
- Complete departmental appraisals, ensure training compliance, recognise achievements and provide constructive feedback.
- Maintain cleanliness of the department including regular deep cleans and equipment movement.
- Collaborate with chefs to compile and produce daily menus with correct allergen data.
- Work independently and as part of a team, demonstrating flexibility and commitment to high standards.
- Assist with rotas and ordering, support the department to achieve maximum food hygiene rating and internal audit rating.
- Follow standards, report maintenance issues and help improve customer experience.
- Ensure COSHH manual and PPE requirements are kept up to date.
- Participate in the trust's fire response procedures.
- Adhere to FIFO stock rotation, temperature controls and correct labeling of food.
- Ensure cleaning schedule is completed daily and additional cleans are allocated and documented.
- Follow the internal rota strictly, seeking approval before any deviation.
- Ensure efficient use of trust materials to minimise wastage.
- Attend and hold team meetings, support ideas to improve service.
- Attend mandatory training including Food Hygiene.
- Report faults in department furnishings to the estates department.
- Operate tills for cash and card payments.
- Maths and English Qualification GCSE or equivalent
- Level 2 Food Hygiene
