Retail Deli Department Manager - Tralee

We are delighted to assist an Irish brand that has grown to over 35 top retail fresh food stores nationwide. The brand is known for its strong community presence and excellent career progression. They are looking for a senior Fresh Food Manager to lead a busy store located in the heart of Tralee, about 30 minutes from Killarney and 20 minutes from Milltown.


This is a substantial, high-demanding role where you will be responsible for leading a fresh food department with more than 20 staff. The role involves hands on fresh food preparation, regular engagement with the general public, planning and organising a busy inventory, and ensuring quality, organisation and commercial performance.


An ideal candidate will have senior management experience in a fresh food, deli or catering element, strong knowledge of food trends, and a commercial understanding of stocks, sales, waste and profit management.

Key Requirements

  • Proven senior Deli Assistant Manager or Deli Department Manager experience in a large, fast paced fresh food environment (more than 5 years).

  • Strong stock control experience, handling orders for large quantities of different fresh food offerings.

  • Excellent organisational skills, with the ability to manage time and priorities effectively.

  • Strong eye for detail and commitment to excellence in customer service, hygiene, and presentation of fresh food displays.

  • Proactive self starter who thrives both independently and as part of a team.

  • Full competence in food safety procedures and HACCP compliance, with a strong understanding of best practices in a food handling environment.

  • Hands on experience preparing a wide range of convenience fresh food; a chef background would be ideal.


Responsibilities

  • Oversee the running of busy deli production, readymade meals, hot and cold counters.

  • Organise work to be completed on time and to a high standard.

  • Maintain food safety protocols, including hygiene records and HACCP records.

  • Lead, manage, and support staff members, organising workloads to ensure timely completion of all tasks.

  • Monitor and maintain optimal stock levels, using digital tools and sales data to drive smart ordering decisions and minimise waste and shrinkage.

  • Train and coach personnel to follow procedures and excel in their roles to increase department performance.

  • Uphold and enforce the highest standards across all fresh food areas, clearly communicating expectations and holding the team accountable for consistent performance.
