The Role

The Pastry Sous Chef will support the Head Pastry Chef in the day-to-day running of the pastry section, ensuring consistency, quality, and organisation across all services.

This is a hands-on role, suited to a Pastry Sous Chef who is confident in service, detail-driven, and comfortable working within a high-standard, fast-paced environment.

Key Responsibilities
  • Support the daily running of the pastry section
  • Deliver consistently high standards of preparation and presentation
  • Maintain strong organisation, prep levels, and service execution
  • Assist with stock control, ordering, and waste management
  • Ensure full compliance with food safety, HACCP, and hygiene standards
  • Support the development of junior pastry chefs
  • Work closely with the wider kitchen and front-of-house teams
Experience Required
  • Current Pastry Sous Chef or strong Pastry Junior Sous Chef
  • Experience in a high-quality, high-volume restaurant environment
  • Good understanding of Italian pastry or Mediterranean flavours preferred
  • Strong attention to detail and consistency
  • Calm, organised, and reliable during service
