JOB TITLE - Junior Sous Chef
DEPARTMENT -
Culinary, Coldra Court Hotel
CONTRACT TYPE -
Permanent
RATE OF PAY -
£13.30 per hour, plus service charge, plus excellent company benefits
HOURS -
37.5 hours per week, 5 days out of 7

OVERVIEW -

OUR IDEAL HERO WILL HAVE -
AAA level 2 or equivalent
An understanding of menu costing and menu planning
A full understanding of HACCP
3 years minimum at a 4/5 star Hotel and/or large reputable restaurant with at least 1 AA Rosette
Experience leading a team of 8+ kitchen staff
Food hygiene level 2
IMPLEMENTING OUR 'YES, WE CAN' PHILOSOPHY, YOU WILL -
Order all food items as per requirement from the dry store
Ensure that all food items that are purchased are received and checked against the invoice, then stored in the correct manner
Make sure that all stock is labelled and rotated
Ensure that resources are used effectively, minimising waste to protect our environment and to reduce costs
Act on behalf of the senior chef, when appointed
