Luso is Michelin-listed, so upholding that standard is central to the role. Open-fire cooking is at the kitchen's heart, so real confidence with grill, charcoal and whole fish is essential, alongside top-quality seafood. You'll take full accountability for food quality, consistency, team recruitment and development, and the kitchen P&L.
