Oliver Dunne Restaurant Group is opening a new Italian restaurant in Dublin 4, and we're looking for a Head Chef to lead the kitchen from the ground up. This is a chance to shape the menu, build and train a team, and set the tone for a restaurant we want people to fall in love with.

What you'll do:

• Develop and run an authentic, seasonally-driven Italian menu
• Recruit, train, and lead the kitchen brigade
• Manage food cost, ordering, and supplier relationships
• Maintain HACCP and food safety standards
• Work closely with front-of-house and ownership on the overall guest experience

What we're looking for:

• Proven head chef or strong senior sous experience, ideally in Italian or Mediterranean cuisine
• A genuine passion for pasta, regional Italian cooking, and quality ingredients
• Strong leadership and team-building skills
• Comfortable in a fast-paced, high-volume kitchen
• Right to work in Ireland
