Job Description
Head Chef - Seasonal Hotel (North Donegal) County Donegal, Ireland

We are seeking an experienced and passionate Head Chef to lead the kitchen of a busy seasonal hotel in the scenic north of Donegal. This is a hands on leadership role for someone who thrives in a fast paced environment, values quality, and can build a strong, reliable kitchen team.

About the Role

You will take full responsibility for the day to day running of the kitchen, menu development, food quality, stock control, and compliance with food safety standards. The role requires strong leadership, creativity, and the ability to deliver consistent high quality dining across a busy service period.

Operating Pattern
  • Peak season (March - November): Open 7 days per week
  • Off peak season (November - March): Open 4 days per week
  • Flexibility is essential, particularly during high season and events/functions
Key Responsibilities
  • Lead, train, and motivate kitchen brigade
  • Design and evolve seasonal menus using local produce where possible
  • Manage food costs, suppliers, and inventory controls
  • Maintain HACCP compliance and kitchen hygiene standards
  • Ensure consistent high quality presentation and service
  • Collaborate with management on budgeting and planning
What We're Looking For
  • Proven experience as Head Chef or Senior Sous Chef ready to step up
  • Strong leadership and team management skills
  • Creative approach to seasonal menu design
  • Excellent organisational and cost-control ability
  • Calm under pressure in a high-volume environment
