As our Food and Beverage Manager, you'll play a pivotal role as a member of the senior management team during the pre-opening phase of our breathtaking hotel. Lead a diverse, multi-outlet food and beverage operation, encompassing our signature Middle Eastern/Mediterranean style restaurant, rooftop terrace, cocktail lounge and private events.

Working closely with the pre-opening leadership team, you'll assist with the recruitment and development of a high-performing Food & Beverage leadership team. We are looking for a hands on and commercially driven leader who thrives on creating unforgettable guest experiences, developing exceptional teams and delivering operational excellence across every food and beverage touchpoint from day one, from breakfast to late night room service.

Your key responsibilities will include:
  • To ensure the Hotel, delivers the minimum Hotel Standards in Food and Beverage departments.
  • Ensure all standard checklists are used as prescribed.
  • Lead a guest-centric culture, empowering your team to anticipate guest needs, confidently resolve feedback at first point of contact and continuously drive improvements to guest satisfaction.
  • Lead by example, ensuring immaculate presentation, professionalism and service excellence are consistently maintained across the team.
  • Ensure that the team are punctual, polite, courteous and helpful to guests and colleagues at all times.
  • Monitor and control departmental costs and controls
  • Prepare check and monitor departmental forecasts and rotas to ensure they are in line with set budgets and meet the service and business needs.
  • To control costs through correct stock usage, storage, rotation, par stock levels maintained, purchase order systems and minimising wastage as per Company standards.
  • Carry out monthly stocktakes and action any discrepancies in line with Company standards.
  • To be involved in the budgeting process and have financial awareness and understanding of how the role impacts the hotel Profit and Loss account
  • Managing and implementing local and departmental product/service knowledge to maximise sales
  • To communicate and share knowledge with other hotel departments.
  • Regularly visit competitor hotels and Food and Beverage outlets to compare and contrast service and product.
  • Ensure team awareness of hotel facilities, restaurant /bar opening times, hotel promotions, products, services and disabled facilities.
  • Ensure team awareness and delivery of local and Company promotions and up-selling of departmental products and services.
  • To ensure the hotel abides by Licensing Laws in England, Scotland and Wales (where applicable), as according to the hotel license arrangements.
  • Must deliver departmental H&S, food safety, fire and any other statutory training required as directed in the Training Calendar or otherwise by your Line Manager.
  • Manage departmental recruitment and retention planning and activity according to budget /manpower planning levels and by agreement of General Manager/Operations Manager
  • To identify, provide, evaluate and monitor departmental Learning and Development
  • Devise, agree and action training plans for the department, with Line Manager
  • To carry out 1:1 meetings and performance reviews with team members and agree developmental training and action plans.
