MISSION DESCRIPTION As a Chef de Partie in charcuterie, you will be responsible for all production related to your specialty, from selecting the ingredients to preparing them for service. You will create terrines, pâtés, cooked or dry charcuterie, and meats while adhering to the recipes and standards of the establishment. The Chef de Partie in charcuterie organizes their station with rigor, ensures mise en place, and actively participates in service. You will work closely with the head chef and the team to ensure perfect coherence of the menu. You will also ensure strict compliance with hygiene standards, manage stock, and control costs.
