Your mission:

As a Chef de Partie, you'll take ownership of your section within Commons Club, our contemporary Scottish brasserie, helping to deliver exceptional dishes that showcase the very best of Scotland's seasonal ingredients. You'll play a key role in ensuring smooth kitchen operations, maintaining consistently high standards, and supporting the development of junior team members.

We're looking for a talented and passionate chef who thrives in a fast-paced environment, takes pride in their craft, and is committed to delivering memorable dining experiences. You'll bring strong culinary skills, great attention to detail, and the ability to lead by example while working collaboratively with the wider kitchen team.

The Details: What exactly you will be doing
  • Taking responsibility for the day-to-day management and performance of your designated section.
  • Preparing, cooking, and presenting dishes to the highest quality standards, ensuring consistency at every service.
  • Supporting Sous Chefs and Senior Chefs in delivering efficient and organised kitchen operations.
  • Assisting with the training, coaching, and development of Commis Chefs and Demi Chefs de Partie.
  • Ensuring your section is fully prepared, stocked, and ready for service at all times.
  • Monitoring food quality, presentation, and portion control to maintain exceptional standards.
  • Maintaining the highest levels of cleanliness, organisation, and food safety throughout your section.
  • Ensuring all food is stored, labelled, and handled in accordance with food safety regulations and company standards.
  • Managing stock effectively, minimising waste, and reporting ordering requirements to senior chefs.
  • Working collaboratively with colleagues across the kitchen and hotel to ensure a seamless guest experience.
  • Remaining calm and focused during busy service periods while maintaining excellent attention to detail.
  • Reporting any maintenance, equipment, health and safety, or operational concerns promptly.
  • Adhering to all hotel policies, procedures, and standards, including health & safety, security, and confidentiality requirements.

Background must-have:
