Description

As Chef de Partie, you will take full responsibility for the smooth operation of your designated kitchen section, ensuring every dish is prepared and presented to the exceptional standards expected at Longueville Manor.

Working closely with the Sous Chef and Head Chef, you will play an important role in maintaining consistency, mentoring junior chefs and contributing to the continued success of our kitchen brigade.

You will be expected to lead by example, demonstrating professionalism, creativity, attention to detail and a genuine passion for outstanding food.

Key Responsibilities
  • Take full ownership of your designated kitchen section.
  • Prepare, cook and present dishes to the highest five-star standards.
  • Ensure consistency in quality, flavour, presentation and portion control.
  • Maintain excellent mise en place and ensure your section is fully prepared for every service.
  • Monitor the quality of ingredients and finished dishes, ensuring only the highest standards leave the kitchen.
  • Contribute ideas for menu development, seasonal dishes and continuous improvement.
  • Supervise, mentor and support Demi Chef de Parties, Commis Chefs and Apprentices.
  • Lead your section confidently during service.
  • Support the training and development of junior chefs, encouraging high standards and continuous learning.
  • Foster a positive, respectful and collaborative working environment.
  • Communicate effectively with the wider kitchen brigade to ensure smooth and efficient service.
Skills, Knowledge and Expertise
  • Organise your section efficiently to maximise productivity and minimise waste.
  • Ensure all equipment is used safely and maintained correctly.
  • Report equipment faults or operational issues promptly.
  • Monitor stock levels within your section and communicate ordering requirements to senior chefs.
  • Contribute to effective stock rotation and minimise food waste through careful planning and preparation.
  • Maintain exceptional standards of cleanliness and organisation throughout your section.
  • Ensure all food is stored, labelled and handled in accordance with Food Safety legislation.
  • Follow all HACCP procedures and company policies.
  • Maintain the highest standards of personal hygiene and professional presentation.
  • Ensure all kitchen equipment, utensils and workspaces are clean and safely maintained.
  • Promote a safe working environment by complying with Health & Safety and Fire Safety procedures.
  • Continuously develop your culinary knowledge, techniques and skills.
  • Demonstrate ambition and commitment towards progression to Junior Sous Chef.
  • Attend all training sessions, team briefings and departmental meetings.
  • Stay informed about current culinary trends, seasonal produce and innovative cooking techniques.
  • Actively contribute to a culture of learning, creativity and excellence.
  • Minimum two years' experience as a Chef de Partie or strong Demi Chef de Partie within a quality kitchen.
  • Previous experience within a busy four or five-star hotel, fine dining restaurant or similar high-quality establishment.
  • Professional culinary qualification.
  • Level 2 Food Hygiene Certificate.
  • Excellent organisational and time management skills.
  • Strong understanding of food safety, hygiene and kitchen operations.
  • Ability to work calmly and effectively under pressure.
