Job Purpose
The Bru Coffee Commercial Manager is responsible for driving coffee quality, sales, branding and the overall coffee offer across all Supermac's and the Plaza Group sites, to generate further sales and profitability. The role leads new product development, product and equipment standardisation, training of key employees, and the development of SOPs and standards to deliver the best coffee offering across the estate.
The Job
- Drives coffee quality, sales, branding and the overall coffee offer across all Supermac's and Plaza Group sites to maximise sales and profitability
- Leads new product development initiatives for the Bru Coffee range, from concept through to rollout
- Standardises coffee products and equipment across all sites, ensuring consistency in recipes, machines and supplies
- Develops and maintains SOPs and quality standards covering espresso extraction, milk texture, drink presentation, portion control, temperature and overall product consistency
- Delivers structured coffee training and coaching for site teams and baristas, ensuring all team members are confident, competent and consistent in preparing the full Bru Coffee range
- Conducts regular site visits, quality checks and practical coaching sessions to ensure drinks are made to approved recipes and brand standards
- Ensures full compliance with Bru Coffee brand guidelines, including menu execution, merchandising, point-of-sale standards, equipment setup, cleanliness and customer-facing presentation
- Monitors speed of service KPIs across sites, identifying barriers to fast, accurate service and working with site teams to improve workflow and peak-time execution
- Reviews coffee margin performance across sites, investigating underperformance through recipe compliance, wastage, portion control, stock management, pricing and promotional activity
- Works with Operations, Area Managers and Site Leadership to agree corrective action plans where coffee quality, speed of service, brand compliance or margin KPIs are not being achieved
- Provides clear feedback, reporting and follow-up actions after site visits, ensuring accountability and continuous improvement across all sites
- Identifies and develops coffee champions at site level to build a pipeline of coffee-passionate people across the business
- Champions the customer experience, coaching teams to deliver friendly, knowledgeable and efficient service that strengthens customer loyalty
Person Specification
- A genuine passion for coffee - essential
- Minimum 3-5 years' experience working in a commercial role with a coffee company or in a similar hospitality/retail environment - essential
- Excellent people management skills, with experience training and coaching teams
- Strong customer-focused attitude and evidence of commercial acumen
- Full clean driving licence, with willingness to travel frequently across all sites
- High proficiency in Microsoft Office (Excel, PowerPoint)
- Experience in a high-volume retail or food service environment preferred but not essential
- Excellent written and spoken English, right to work in Ireland .
- Able to work 5/7, this role requires full flexibility to work 5 shifts across 7 days. Weekends are part of the normal working week.
