Role Purpose / Scope

The Beverage Manager will lead our beverage program, delivering exceptional guest experiences. Responsible for curating dynamic drink menus, managing stock levels, recruiting and training staff, and ensuring the overall success of the beverage department.


Key Responsibilities
  • Oversee daily beverage operations across all outlets (bars, restaurants, events, etc.).
  • Develop and maintain innovative and seasonal beverage menus, including cocktails, wine, spirits, and non-alcoholic options.
  • Manage beverage inventory, ordering, and stock control to ensure optimal levels and cost efficiency.
  • Recruit, train, mentor, and lead a team of talented bar staff, fostering a positive and collaborative work environment while ensuring exceptional service and adherence to company standards.
  • Conduct regular staff meetings to communicate goals, new recipes, and procedures, ensuring consistent execution of menu items.
  • Monitor and analyse beverage sales, margins, and performance, implementing strategies to drive profitability.
  • Ensure compliance with health, safety, and licensing regulations.
  • Maintain relationships with suppliers, negotiate pricing, and source premium products.
  • Stay up-to-date with industry trends and guest preferences to keep offerings fresh and competitive.
  • Coordinate beverage service for events and special functions as needed.
  • Handle guest feedback related to the beverage program and ensure swift resolution of any issues.
Requirements & Qualifications
  • Mandatory:
  • Lawful permanent resident, eligible to work in the UK
  • Excellent knowledge of mixology, spirits, wines, and non-alcoholic beverages
  • Knowledge of Japanese beverages (e.g., sake, Japanese whisky, tea culture)
  • Strong leadership, communication, and organisational skill
  • Passion for hospitality and a guest-centric mindset
  • Professional appearance and excellent interpersonal skills
  • Maintain a warm and friendly demeanour at all times, while remaining genuine
  • Fluent in English
  • Preferred:
